The carrot is a root vegetable, meaning simply that that part of it which is eaten is the root and grows beneath the ground. It is usually orange or white in color and can be eaten as both a raw and a cooked vegetable.

History indicates that the carrot was first found in Aphganistan although there are ancient Roman writings which mention a vegetable which many feel may indeed be referring to some form of the carrot. There are today two groupings of cultivated carrots, the eastern carrot and the western carrot. The existence of the eastern carrot is first found to be recorded some time in the fifteenth or sixteenth century in Aphganistan. The existence of the western carrot is first found to be recorded in the history of the Netherlands in the 15 th or 16 th century.

An interesting part of the history of the carrot is that it was used as an excuse during World War II as an explanation of the fact that British military personnel seemed suddenly able to see extraordinarily well in the dark. In 1940, British officer John Cunningham, who became known by the nickname of "cat's eye" because of what appeared to be an extraordinary ability to see in the dark, is believed to have had his amazing capabilities attributed by British propaganda to the supposed fact that he ate a lot of carrots. In reality, Officer John Cunningham's amazing capabilities were not because of amazing visual enhancements but rather because of AI, Airbourne Interception, the aircraft version of what we now know as radar. The British propaganda used the carrot story simply to cover up the existence and use of Airbourne Interception. British propaganda stated that officer John Cunningham, along with a number of other members of a selected group of British pilots, had eaten a significant amount of carrots, specifically with a goal of gaining superior night vision, which the British propaganda pointed out had obviously been effectual.

Carrots are considered by many medical doctors and other professional health care experts to be an excellent source of antioxidant compounds, which they feel that studies seem to indicate are helpful in helping the human body to maintain a healthy heart and cardiovascular system as well as a healthy bladder, cervix, prostate, colon, larynx, and esophagus.

It is also important to note that many medical doctors and other professional health care workers have stated that clinical studies seem to indicate that eating an excessive amount of carrots can lead to a condition called caratoderma in which the palms of the hands, the soles of the feet, the area behind the ears and possibly the pigmentation in other parts of the human body takes on a yellowish/orangish cast. They further stated that studies seem to indicate that cutting down on the amount of carrots being consumed seems to be all that is needed in having this condition disappear.
