Celery is a herbaceous biennial plant in the plant family known as Apiaceae . Umbelliferae. This particular family is known for its hollow stems and for usually being aromic. Celery was first found in western and in northern Europe , mostly in the ditches and the saltmarshes.
Kalamazoo , Michigan is known as celery city and there are quite a few diverse legends as to how celery first came to this area, indeed, to this country. One story is that it was left there as a result of an ancient ice age, when a glacier came to that area and spread rich soil across a number of acres, the loam being fertile with celery.
Another story tells us that the celery was first planted there by George Taylor in 1856. It says that Taylor, a native of Scotland , brought the seeds with him from his native land and planted them in the rich, fertile soil of Kalamazoo .
Still another version has it that Cornelius De Bruin, a native of the Netherlands who came to this country in 1866, discovered the celery growing in what is referred to as a small kitchen soup garden and asked permission to gather some of the seed. It is said that he in turn planted it and caused it to grow over a number of acres, thereby earning Kalamazoo the name Celery City .
In history, celery was referred to as a vegetable which was grown for winter and for early spring. It was considered valuable primarily for its antitoxic properties and was considered to be a cleansing tonic to be taken to cleanse the body from impurities, after what was considered to be the foul stagnation of winter.
Celery is a popular vegetable, used often in salads and soup, particularly those of Oriental cuisine. Celery is considered a good food by many dieters, since it burns up more calories by its consumption than it contributes to the body, thereby being referred to as having "negative" calories while often quenching feelings of hunger which could lead to the intake of more high calorie foods.
Celery seeds are often used as a spice and salt which is made from celery is often used in place of ordinary salt. Celery salt is often used as a flavor enhancer in certain alcoholic drinks, primarily the vodka and tomato juice concoction which is known as a "Bloody Mary". It is also used as a flavor enhancer for what was at one time termed, the Depression Style Sandwich, more commonly known today as the Chicago style hotdog.
Celery, taken both as in its whole and as a juice, is considered by many to be beneficial in maintaining healthy joints and urinary tracts. It is also felt by many medical doctors and other medical health care professionals to be beneficial in helping to maintain a healthy digestive system and liver system.
