Green tea, known in China as Pinyin Lu Cha, is a tea that has undergone only a small amount of oxidation, that is loss of electrons, in comparison to the black teas to which most of us tend to think when we think of tea.
History tells us that green tea was first discovered in China , supposedly by a Chinese emperor who, while boiling some water, had some which leaves which were blowing through the air fall into his kettle. The emperor is supposed to have tasted the water into which the leaves had fallen and like the taste and thus green tea came into existence.
During those early years 618-907, green tea was carefully processed in order to be preserved for long periods of time. The leaves from which the green tea was made were steamed on bamboo trays, then they were crushed into a pulp form and pressed into molds where it was left to harden. After that, the mixture was dried in the sun and then baked, in order to prevent the mixture from rotting. This preserved the mixture which would later be brewed as wanted into green tea.
